[CI] Update try-runtime CLI (polkadot-fellows#419)

Depends on paritytech/try-runtime-gha#2

Changes:
- Enable `all` try-runtime checks for Parachain runtimes
- Update GHA

- [x] Does not require a CHANGELOG entry
