Docs: update Protocol Insights Dashboard links

This PR includes the update of the links to the new Protocol Insights Dashboard in the documentation website. It also includes minor renaming of titles in the website.

Documentation Updates:

• Updated various titles and labels to use consistent capitalization across the documentation. For example, "Get Started" was changed to "Get started" and "Mithril Protocol" was changed to "Mithril protocol". [1] [2] [3] [4] [5] [6] [7]

URL Updates:

• Updated the URL for the Mithril Protocol Insights dashboard in multiple files to ensure the correct link is used. [1] [2] [3]

Configuration File Updates:

• Updated the docusaurus.config.js file to reflect changes in blog and documentation labels. [1] [2]
