The top level categories match the correspondinig FreeCAD workbench.
After the top level usually there are 3 subcategories: Create, Query, Action.

Create: This nodes create a new element in FreeCAD -
Action: This nodes modify someething in FreeCAD, so no new element is created. Action nodes doesn't have a subcategory, because Dynamo defaults to the Action subcategory. However file names contain the Action subcategory. -
Query: This nodes get some data from FreeCAD, you can use this data in Dynamo
This sub-subcategories are created only when there are a lot of nodes in that category, so it's possible that they are not existing everywhere.
