chore: remove unused EclHighlightingStyleToTokenMapper class

It looks like the interface has been removed in Xtext 2.26, but there is no entry in the release notes about it. Could be that it was deprecated already and they got rid of it. If not feel free to revert this commit and fix the compile error.
