[Improve][Flink] Remove useless stage type.

Purpose of this pull request

PR(#5483) provide CatalogTable interface. SeaTunnel row type can be inferred from CatalogTable.getSeaTunnelRowType and bypass conversion from TypeInformation. So stageType related codes(#5419 ) are useless.
