Move the Display into its own module, create DummyDisplay so we don't need to override behaviour with the TEST_ENV flag. Add the option to set the display contrast via europi_config

Fall back to the DummyDisplay if the I2C display fails, but continue to print the warning. This lets us debug things on screenless breadboard builds, and unblocks the (still hypotetical) EuroPi Lite.
