remove outdated projects

I suggest removing projects that have not been updated for over 3 years.

I appreciate that we should keep the list fresh to help users find what they're looking for quicker, but deleting them seems a bit "destructive". At the very least, stale projects may still be useful as a reference even after many years.

Perhaps an alternative could be hiding them under an accordion:
