I was going to do Big Sur, but now I'm doing 10.15.7 Catalina.
I am sorry, its been almost 3 years since I last did a hack on this machine, I even got a new PC now. I cannot provide you with much help. I had some issues getting the system to boot at the beginning as well, I just remade the boot files on another USB and then compared the results, seeing if I missed something on either. I would recommend you do this on linux not windows (not sure if you are on windows) bcs linux is better when dealing with external storage.
I'm again very sorry, but I simply cannot help you further.
One other thing to look at is the BIOS settings, bcs based on your logs it seems something in your BIOS might be misconfigured, I would try checking that, making sure your NVRAM vars are also set correctly.
