Either similar to the ones we use on other charts, or something like "2nd wave", "1st wave", "all". The default would be 2nd wave.

If possible, data from OWID/Edelweiss would be filtered based on this date range, to reduce the load.

I would not show the date time picker since it is rarely used and only makes the UI more busy.
