A wider range of text formatting options would be nice such as text alignment, indentation, quotes, images and hyperlinks. Fonts would be a nice cosmetic feature to personalize too, if possible.

And be able to remove the red underlining would be nice.

Red underlining is typically spell check flagging a word as spelled incorrectly. You could turn off the "Check Spelling" option in settings under "Diary Entries". That should get rid of any red underlining you find!
