[ENH] - Upgrade to conda-store 2024.6.1

Conda-store was recently released and has some great new updates. I'd like to get those changes integrated into conda-store.

The latest and greatest UI for our end users. Namely:

Anything else?

This is blocked upon opening as we are awaiting a release of the jupyterlab-conda-store. Just didn't want to lose track of this.

I am reopening this issue, as we needed to rollback the upgrades due to a BUG within the conda-store recent UI updates
