It would indeed be interesting to support the KITTI-360 dataset. If you want to give it a shot, we can see how to help! To support all data provided, one would need to add new sensor types (e.g. semantic segmentation) to kapture.
From what I read, it should be relatively straightforward to convert this dataset to kapture. Except the segmentation, that not handled by kapture (as segmentation, but can still be inserted as a RGB camera).
