Missing privacy manifest

This repo needs to provide a privacy manifest, as described here: https://developer.apple.com/news/?id=av1nevon.

This is urgent given Apple's May 1st deadline enforcing this on ASC submission.

We're preparing an SDK release with the privacy manifest, there is a PR open here with a release candidate artifact.

Will follow up here once this SDK release has been published.

Hey @julianlocke, @diogot, we've published two stats-sdk-objc releases with privacy manifest files: v5.0.1 and v4.7.1.

If you've also installed mux-stats-sdk-avplayer, we've included the privacy manifest file in the v3.6.1 release.
