remove all of the use_nakamoto logic so hat it becomes the default
set DEFAULT_EPOCH to 2.5
update epoch 2.5 height on mainnet and testnet
build and release an image (without beta tag) on quay.io
update the default docker images for bitcoin-node, stacks-node, and api
