The environment file that is used for the students is here: https://github.com/henryk-modzelewski/2i2c-eosc350/blob/main/environment.yml

We might want to update our environment file to match this so that all testing is against this during the term. @jlalvis or @santisoler: would you mind starting a pr to make this update?
