This includes kernel 6.10

Downside is we're leaving behind the LTS version.

I think Yocto Poky is probably close to their next release cycle. Maybe the next LTS version after scarthgap would potentially include the newest kernel.
Otherwise, we could try experimenting with updating it manually and test if all our current product/images won't break.
Such update is critical and we should approach it carefully IMO
