This was raised in issue #5 but I think it needs to be flagged more prominently - there appears to be no menu option for Administer >> CiviProspect >> Prospect Types, as other users have pointed out (or, for that matter, Administer >> CiviProspect). I see the field in the data table for indicating whether a workflow is for prospects, but there is no UI option for that; I can only assume that's set in the missing administer pages? This is a pretty problematic omission as far as using the extension.

As it stands currently there is not UI option to create additional prospect cases. There was some discussion with core to add this but it became somewhat paused.

We may add this in future but currently you can do this by going into the database (or via the API) and setting your new case type as civicrm_case_type.case_type_category = [ID of the prospect case type category] normally 2, but you can check this in your option groups settings to confirm the value needed.
