A prebuilt ISO image for this would be pretty useful. I'm fully aware of how to build it but it would be nice to have prebuilt images.

Check out achillobator! We are mainly developing stuff there https://github.com/centos-workstation/achillobator @charles8191. This repository is just made to be a base for it

I am 100% aware of it. I just prefer a default GNOME that I layer my extensions over to have a Windows layout.
