I keep receiving an error when trying to produce previews for PDF documents. They start working again once I change the theme to one that's native to Emacs.

This seems AUCTeX and ghostscript related problem.
Reported on bug-auctex https://debbugs.gnu.org/cgi/bugreport.cgi?bug=35571
